and of extreme importance.
We have
selected the best Cold Press Oils of Tuscany and you can choose either mixed
cases of various oils or you can order a case of just one kind.
If you would like to know more about olive oil, please see the various links
on the left.
We have
selected different olive oils of very high quality, Cold Press, extremely
low acidity content, and shipped only after the harvest, so between the months
of December and March. This way you receive the "new oil" when it is at its
best - and the shipping is best done in the winter months to avoid temperature
alterations.
You
should book your oil well in advance because there is a very limited supply.
In
November 2007, the oils are produced by each individual producer in their own
facilities and then shipped by Tuscany
In A Bottle. All are cold pressed and are produced in different farms

LA FONTE (Montalcino) |

The
extremely Cold Pressed
Olio
Extra Vergine d'Oliva by Podere La Fonte in Montalcino of Organic
Agriculture.
Crushed by the means of a traditional granite stone mill and pressed at 350
atmosphere.
The oil is made of 5 different olive varietals (see "Varietals") in different
quantities (depending on how generous the year is).
Annual production of
approx. 500 litres.

SAN POLINO (Montalcino) |

The
traditional Olivastro
This olive
oil is produced from century-old Olivastro trees on the Northern side of the extinct
volcano, Monte Amiata. The varietal called Olivastro is an indigenous varietal from which most olive
varietals derive and it gives a very nutty tasting olive oil. The olives are of Organically Certified Agriculture.
Harvest in November is manual and the olives are taken to the local press in
Montenero d'Orcia and are cold pressed. Annual production of approx.
900 litres.

PORNANINO (Radda in Chianti) |
Traditionally
Cold pressed, best of the Chianti
Olio
Extra Vergine d'Oliva produced by a prestigious olive farm in the area
of Radda in Chianti, Pornanino. Hand-picked olives, immediately
crushed by the means of a traditional granite stone mill, pressed and
centrifuged. Annual production of approx. 6000 litres, all of which
sell out before the oil is made - so be quick in booking yours!

CASTELLO DI VOLPAIA (Radda in
Chianti) |
The
Frantoio of Castello di Volpaia In 1985 most of the secular olive trees of this hilly region of the old
Chianti died because of a devastating cold winter. Since then hundreds of new
trees have been planted of the variatals: Frantoio, Leccino and Moraiolo from
which Castello di Volpaia now extracts this famous olive oil in their very own
stone mill which is located in the middle of the middle age town. The
extraction of the oil is done by the "Sinolea" method, a method with which oil
is separated from the paste by clinging to metal plates - thousands of which
are immerged into the olive paste. Cold press and acidity is below 0,3%.

PERAZZETA (Montenero d'Orcia) |
|
Montenero
d'Orcia, a Gold Medal olive oil
From the very Northern hills of
the Grosseto province comes this gold medal winner olive oil made
of Leccino, Frantoio, Moraiolo, and Olivastra Seggianese
varieties. The family owned estate Perazzeta pick the olives by
hand in November and they are then taken immediately to the
Frantoio Franci, famous in the region for its press. After a short
period of stabilization in special vessels, the oil is
hand-bottled on the estate and released very quickly after the
harvest.
